Ingredients
  

For the Filling

  • 4 medium medium potatoes Use starchy potatoes for best results.
  • 1 tablespoon olive oil For enhancing taste.
  • 1 teaspoon cumin Adds an earthy flavor.
  • Salt to taste

For Assembly and Frying

  • Corn tortillas Warmed for easy rolling.
  • Vegetable oil for frying Ensure oil is hot for frying.

Preparation

  • Boil the potatoes in salted water for 15 to 20 minutes until tender. Drain and allow to cool slightly.
  • Once cool, peel the potatoes and mash them in a mixing bowl until smooth with some texture.
  • In a pan, heat the olive oil over medium heat. Add the mashed potatoes, cumin, and salt, mixing until heated through.
  • Warm corn tortillas in a dry skillet over low heat to make them pliable.

Cooking

  • Spoon a portion of the potato mixture onto each tortilla and roll tightly.
  • In a frying pan, heat vegetable oil over medium heat. Fry the rolled taquitos seam side down until golden brown and crispy, about 4 to 5 minutes.
  • Transfer the taquitos to a plate lined with paper towels to drain excess oil and serve warm.

Notes
