Ingredients
  

For the Chips

  • 4 large Russet potatoes High starch content is ideal for making chips.
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika Adds a smoky flavor.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon brown sugar
  • ½ teaspoon salt Adjust to taste.
  • ½ teaspoon black pepper
  • optional cayenne pepper For added heat, adjust to taste.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper.
  • Wash and peel the Russet potatoes. Slice the potatoes very thinly, about 1/8 inch thick.
  • Soak the potato slices in a large bowl of cold water for at least 30 minutes to remove excess starch.
  • Drain and pat the potato slices dry with a kitchen towel.

Seasoning

  • In a small bowl, mix the olive oil, smoked paprika, garlic powder, onion powder, brown sugar, salt, and black pepper. If desired, add cayenne pepper.
  • Place the dried potato slices in a large bowl, add the oil and spice mixture, and toss to coat evenly.

Baking

  • Arrange the coated potato slices in a single layer on the prepared baking sheets without overlapping.
  • Bake for about 20-25 minutes, monitoring closely until the chips are golden brown and crispy.
  • Remove from the oven and let the chips cool on the baking sheets for a few minutes before serving.
