Instructions
Bring a large pot of salted water to a boil.
Add gnocchi to the boiling water and cook for 2-3 minutes, or until they float to the top. Remove with a slotted spoon and drain.
In a large frying pan, heat olive oil over medium-high heat.
Add the gnocchi to the hot oil and cook undisturbed for 2-3 minutes until golden brown and crispy.
Stir gently and continue cooking for another 2-3 minutes until all sides are crispy.
Reduce heat to medium and add minced garlic, sautéing for 1 minute until fragrant.
Add fresh spinach and cook for 2-3 minutes until wilted.
Season with salt, black pepper, and red pepper flakes if using.
Remove from heat and stir in crumbled feta cheese. Serve immediately.
