Crispy Gnocchi with Spinach and Feta

Ingredients
  

  • 1 pound Gnocchi
  • 2 tablespoons Olive Oil
  • 4 cups Fresh Spinach
  • 4 ounces Feta Cheese crumbled
  • 2 cloves Garlic minced
  • 1 teaspoon Red Pepper Flakes optional

Instructions
 

  • Bring a large pot of salted water to a boil.
  • Add gnocchi to the boiling water and cook for 2-3 minutes, or until they float to the top. Remove with a slotted spoon and drain.
  • In a large frying pan, heat olive oil over medium-high heat.
  • Add the gnocchi to the hot oil and cook undisturbed for 2-3 minutes until golden brown and crispy.
  • Stir gently and continue cooking for another 2-3 minutes until all sides are crispy.
  • Reduce heat to medium and add minced garlic, sautéing for 1 minute until fragrant.
  • Add fresh spinach and cook for 2-3 minutes until wilted.
  • Season with salt, black pepper, and red pepper flakes if using.
  • Remove from heat and stir in crumbled feta cheese. Serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet to retain crispiness.
