Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup dill pickle juice For marinating
  • 2 large eggs For binding the coating
  • 2 tablespoons olive oil For frying

For the Coating

  • 1 cup breadcrumbs Use fresh for best results
  • 1 cup grated Parmesan cheese For flavor and crispiness
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • ½ teaspoon salt

Instructions
 

Preparation

  • Marinate the chicken in dill pickle juice for at least one hour or overnight in the refrigerator.
  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a shallow bowl, mix the breadcrumbs, grated Parmesan, garlic powder, onion powder, black pepper, and salt.
  • In another bowl, whisk the eggs until well blended.

Cooking

  • Remove the marinated chicken from the refrigerator and shake off excess pickle juice.
  • Dip each chicken breast into the egg mixture, then coat with the breadcrumb mixture.
  • Heat olive oil in a skillet over medium heat, then cook the breaded chicken for 3-4 minutes on each side until golden brown.
  • Transfer the browned chicken to the prepared baking sheet and bake for 15-20 minutes or until the internal temperature reaches 165°F (74°C).
  • Let the chicken rest for a few minutes before serving.

Notes

For an extra flavor boost, add dried herbs to the breadcrumb mixture. Ensure the chicken is well-drained after marinating for the crispiest coating.
