  • 2 cups cooked chicken, shredded Can use store-bought rotisserie chicken.
  • 1 cup shredded cheese (cheddar or Monterey Jack) Choose your favorite type of cheese.
  • 1/2 cup onion, finely chopped For flavor and texture.
  • 2 cloves garlic, minced Adds depth of flavor.
  • 1 tsp chili powder Adjust based on heat preference.
  • 1/2 tsp cumin For a warm, earthy flavor.
  • Salt and pepper to taste salt and pepper Season according to your preference.

For assembly

  • 12 small corn or flour tortillas Warmed for pliability.
  • Vegetable oil for frying vegetable oil Use an oil with a high smoke point.

Preparation

  • In a large bowl, combine the shredded chicken, cheese, onion, garlic, chili powder, cumin, salt, and pepper. Mix well until all ingredients are evenly combined.
  • Heat a skillet over medium heat. Lightly warm the tortillas for about 30 seconds on each side to make them pliable.
  • Take a tortilla and add about 2 tablespoons of the chicken mixture near one edge. Roll the tortilla tightly, tucking in the sides as you go.
  • Secure the rolled taquito with a toothpick if needed. Repeat the process with the remaining tortillas and chicken mixture.

Cooking

  • In a large pan, add enough vegetable oil to cover the bottom. Heat over medium-high heat until the oil shimmers.
  • Carefully place a few taquitos in the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side, or until they turn golden brown and crispy.
  • Remove the taquitos from the oil and place them on a paper towel-lined plate to drain excess oil. Enjoy hot!

Notes

To ensure crispy taquitos, warm the tortillas to prevent cracking, do not overfill, and maintain the correct frying temperature. You can also double fry for extra crunch.
