Ingredients
  

For the Caesar Dressing

  • ½ cup full-fat mayonnaise Use high-quality for best flavor.
  • 3 tbsp Greek yogurt Adds creaminess.
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 2 tbsp lemon juice Freshly squeezed.
  • ¼ cup Parmesan cheese (freshly grated) Use fresh for best taste.
  • 1-2 cloves garlic (minced) Adjust based on preference.
  • ¼ tsp black pepper
  • Pinch sea salt

For the Chicken Cutlets

  • 5 chicken cutlets Pounded to even thickness.
  • cup all-purpose flour
  • ½ tsp salt For the flour mix.
  • ¾ tsp smoked paprika
  • 2 eggs Whisked.
  • ¼ tsp salt For the egg mix.
  • ¾ cup panko crumbs
  • ¼ cup breadcrumbs
  • 1 tsp dried parsley
  • ½ tsp ground black pepper
  • ½ tsp sea salt
  • ½ tsp dried oregano
  • 1 tsp garlic powder
  • ¼ cup Parmesan cheese (freshly grated) For coating.

For Assembly

  • 2 romaine hearts (chopped) Fresh.
  • 1-2 French baguettes Split into portions.

Preparation of Caesar Dressing

  • In a bowl, mix the mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, grated Parmesan cheese, minced garlic, black pepper, and a pinch of sea salt until smooth and creamy.

Prepare the Romaine

  • Set aside 4-5 tablespoons of the dressing for later. In a medium bowl, combine the chopped romaine with the remaining dressing and toss well. Cover and refrigerate.

Prep the Chicken Cutlets

  • Pound chicken cutlets to even thickness and season with sea salt and black pepper.

Set Up a Breading Station

  • In three shallow plates, mix flour, salt, and smoked paprika in the first; whisk eggs with salt in the second; and combine panko crumbs, breadcrumbs, parsley, black pepper, sea salt, oregano, garlic powder, and grated Parmesan in the third.

Bread the Chicken

  • Heat oil in a pan over medium heat. Dredge cutlets in flour, dip in egg, then coat with the breadcrumb mixture. Repeat for all cutlets.

Fry the Chicken

  • Fry cutlets in hot oil for about 4-5 minutes per side until golden brown. Drain on a wire rack.

Assemble the Sandwiches

  • Slice baguettes and spread reserved dressing inside. Add a cutlet and top with Caesar salad mixture. Sprinkle extra Parmesan and serve.

Notes

For an extra crispy coating, let the breaded chicken rest for 10 minutes before frying. To customize, consider adding toppings like avocado or spicy elements.
