  • 1/4 cup grated Parmesan cheese Adds additional flavor.
  • 1 egg, beaten Acts as a binding agent.
  • 2 tablespoons chives or green onions, chopped (optional) Add for extra flavor.

Preparation

  • Gather all your ingredients. Make sure your mashed potatoes are cooled to allow for easier handling.
  • In a mixing bowl, combine the cooled mashed potatoes, shredded cheese, breadcrumbs, grated Parmesan cheese, beaten egg, chopped chives or green onions (if using), and salt and pepper. Mix everything together until well combined.
  • Scoop out a tablespoon of the mixture and roll it into a small ball. Repeat this process until you have formed all your bites.

Cooking

  • Heat oil in a deep frying pan over medium heat. To test if the oil is hot enough, drop in a small piece of the mixture; if it bubbles and sizzles, you are ready to start frying.
  • Gently lower a few potato bites into the hot oil, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes, flipping halfway through to ensure even cooking.
  • Remove the bites from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
  • Continue frying the remaining bites until finished. Serve warm and enjoy!
