Crispy beef is a delightful dish combining succulent beef with a crispy exterior and tender interior, complemented by a flavorful Asian-inspired sauce.

Ingredients
  

Beef Preparation

  • 1.5 pounds stir fry steak slices or sirloin steak cut into thin slices Choose a tender cut for best results.
  • 3 tablespoons low-sodium soy sauce Divided use.
  • 6 tablespoons cornstarch For coating the beef.
  • 4 cups canola oil For frying.

Sauce Ingredients

  • 1 medium-sized navel orange Zested and juiced.
  • 3 tablespoons molasses
  • 1 tablespoon rice vinegar
  • 1.5 teaspoons sesame oil
  • 1 jalapeño de-seeded and thinly sliced Adjust for heat preference.
  • 3 cloves garlic, minced
  • 1 teaspoon freshly grated ginger Or substitute with 1/2 teaspoon ground ginger.
  • 0.5 teaspoon red pepper flakes

Garnish

  • 2 scallions chopped For garnish.

Instructions
 

Preparation

  • In a large bowl, toss the beef strips with 1 tablespoon of soy sauce. Sprinkle cornstarch over the beef strips and toss until evenly covered. Place the beef on a wire rack atop a baking sheet and put it in the freezer for about 45 minutes.
  • Peel the zest of the orange into long strips, then slice them thinner. Cut the orange in half and juice it until you have about 1/4 cup of fresh orange juice.

Make the Sauce

  • In a medium bowl, mix the orange zest strips, orange juice, remaining 2 tablespoons of soy sauce, molasses, rice vinegar, sesame oil, sliced jalapeño, minced garlic, freshly grated ginger, and red pepper flakes. Whisk until well combined.

Cooking

  • Heat canola oil in a large pot over medium-high heat until it reaches 375°F (191°C).
  • Carefully add one-third of the beef strips to the hot oil and fry for about 3 minutes, or until golden brown. Remove with a slotted spoon and transfer to a plate lined with paper towels. Repeat with remaining beef strips.
  • In a large skillet, combine the soy sauce mixture with the fried orange zest strips. Bring to a boil, then reduce heat and let simmer for about 3 minutes.
  • Add the crispy beef strips to the skillet and toss gently to coat in the sauce. Serve warm over fluffy white rice, garnished with chopped scallions.

Notes

For extra crispiness, avoid overcrowding the pot while frying. Serve immediately for best texture.
