Ingredients
  

For the Salmon Bites

  • 1 lb salmon fillet, cut into bite-sized pieces Fresh salmon is recommended for best flavor.
  • 1 cup panko breadcrumbs For a crispy texture.
  • 1/2 cup all-purpose flour For coating the salmon.
  • 2 eggs, beaten Acts as a binder for the breadcrumbs.
  • 1/2 cup mayonnaise
  • 2-3 tablespoons sweet chili sauce Adjust to taste.
  • 1 tablespoon sriracha Adjust to taste.
  • Salt and pepper to taste
  • Oil for frying Use enough for shallow frying.
  • Chopped green onions and sesame seeds for garnish Optional, for presentation.

Instructions
 

Preparation

  • Gather all your ingredients.
  • In a bowl, mix together mayonnaise, sweet chili sauce, sriracha, salt, and pepper. Stir until smooth and set aside.

Coating the Salmon

  • Dip each piece of salmon in all-purpose flour, ensuring it is evenly coated.
  • Move the floured salmon into the bowl with beaten eggs, making sure it's well covered.
  • Roll each piece in the panko breadcrumbs, pressing slightly to adhere.

Frying

  • Heat oil in a skillet over medium-high heat until hot enough for frying.
  • Fry salmon bites in small batches for about 3-4 minutes, turning occasionally until golden brown.
  • Remove from oil and drain on paper towels.

Finishing Touches

  • Toss the hot, crispy salmon bites in the sauce until well coated.

Serving

  • Arrange on a platter, garnished with green onions and sesame seeds.
  • Serve with extra sauce on the side for dipping.
