Crispy Air Fryer Yellow Squash

  • 2 medium yellow squash
  • 1 cup breadcrumbs (panko or regular)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 2 large eggs

Preparation

  • Wash the yellow squash thoroughly. Cut off both ends, then slice the squash into rounds about 1/4 inch thick.
  • In one bowl, beat the eggs. In another bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper.

Cooking

  • Dip each squash slice into the beaten eggs, allowing any excess to drip off. Then, coat the slice in the breadcrumb mixture, pressing gently to adhere.
  • Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  • Lightly spray the air fryer basket with cooking spray to prevent sticking. Arrange the coated squash slices in a single layer in the basket.
  • Cook the squash for about 10-12 minutes, flipping halfway through, until golden brown and crispy.
  • Repeat with any remaining squash, making sure not to overcrowd the basket.
  • Serve hot and enjoy!

Notes

For best results, double dip in egg and breadcrumbs for a crispy texture. Adjust seasoning as desired. Allow cooked squash to cool completely before storing in an airtight container.
