Ingredients
  

Filling

  • 2 cups shredded chicken or your preferred filling
  • 1 cup shredded cheese
  • ½ cup refried beans optional
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Wrap

  • 10-12 pcs corn tortillas

Cooking

  • Cooking oil spray

Preparation

  • Preheat your air fryer to 380°F (194°C) for about 5 minutes.
  • In a mixing bowl, combine the shredded chicken, cheese, refried beans (if using), chili powder, cumin, garlic powder, salt, and pepper. Mix until well combined.
  • Warm the corn tortillas in a microwave for about 30 seconds to make them more pliable.

Assembly

  • Take a tortilla and place about 2 tablespoons of the filling on one side of the tortilla.
  • Roll the tortilla tightly around the filling, making sure to tuck in the sides as you roll.
  • Repeat this process for the remaining tortillas and filling.

Cooking

  • Lightly spray the air fryer basket with oil spray.
  • Place the taquitos in a single layer in the basket, avoiding overcrowding.
  • Spray the tops of the taquitos lightly with cooking oil.
  • Cook for about 8-10 minutes, turning them halfway through, until golden brown and crispy.
  • Once done, remove them and let them cool slightly before serving.
