Crispy Air Fryer Taquitos

Ingredients
  

For the Filling

  • 2 cups shredded cooked chicken or beef Use leftovers if available
  • 1 cup black beans or refried beans
  • 1 cup shredded cheese Cheddar, Monterey Jack, or Mexican blend
  • 1 tbsp taco seasoning Optional

For the Taquitos

  • 8 pieces corn or flour tortillas
  • 1 tbsp olive oil or cooking spray For brushing or spraying
  • 2 tbsp fresh cilantro For garnish

For Serving

  • 1 cup salsa For dipping
  • 1 cup guacamole For dipping

Instructions
 

Preparation

  • Preheat your air fryer to 400°F (200°C).
  • Shred your cooked chicken or beef and mix in a bowl with black beans, cheese, and taco seasoning, if desired.
  • Take a tortilla and place a small amount of the filling mixture in the center. Roll it tightly and secure it with a toothpick if needed.
  • Lightly brush the outside of each taquito with olive oil or spray it with cooking spray.

Cooking

  • Arrange the taquitos in a single layer in the air fryer basket, leaving space between each for even cooking.
  • Cook for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  • Remove from the air fryer and let cool slightly before serving.

Notes

To store, place cooled taquitos in an airtight container in the refrigerator for up to 3 days, or freeze for up to three months. Reheat in air fryer until crispy.
