  • 1 pound fingerling potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional: fresh herbs (like rosemary or thyme)

Preparation

  • Wash the fingerling potatoes under running water and scrub them gently to remove any dirt.
  • Pat the potatoes dry with a clean cloth or paper towel.
  • Cut the fingerlings in half lengthwise. If some are bigger, consider quartering them for even cooking.
  • In a large bowl, combine the olive oil, garlic powder, onion powder, paprika, salt, and black pepper. If using fresh herbs, chop them finely and add to the mixture.
  • Add the halved fingerling potatoes to the bowl and toss them until they are evenly coated with the seasoning.

Cooking

  • Preheat your air fryer to 400°F (200°C).
  • Arrange the coated fingerling potatoes in a single layer in the air fryer basket, avoiding overcrowding.
  • Cook for about 15-20 minutes, shaking the basket halfway through to ensure even cooking.
  • Check for doneness; the potatoes should be crispy and golden brown. If they need more time, continue to cook in 2-3 minute increments.
  • Once ready, remove them from the air fryer and let them cool slightly before serving.

Notes
