Ingredients
  

Pasta and Vegetables

  • 8 ounces pasta (your choice, such as fettuccine or penne)
  • 2 cups fresh mushrooms, sliced Varieties like cremini or shiitake work best.
  • 1 cup fresh spinach, chopped Can be substituted with kale or arugula.

Sauce Ingredients

  • 1 cup heavy cream For a lighter sauce, substitute half with Greek yogurt.
  • 1 cup vegetable broth
  • 1 cup grated Parmesan cheese Freshly grated for best results.
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Garnish

  • Fresh basil leaves Optional, for garnish.

Instructions
 

Cooking the Pasta

  • Cook the pasta according to the package instructions until al dente. Drain and set aside.

Preparing the Sauces

  • In a large skillet, heat the olive oil and butter over medium heat.
  • Add the sliced mushrooms and sauté until tender and golden brown, about 5-7 minutes.
  • Incorporate minced garlic and stir for 1 minute until fragrant.
  • Pour in the vegetable broth and bring to a simmer.
  • Stir in heavy cream and cook for a few minutes to thicken.
  • Add grated Parmesan cheese and stir until melted.
  • Season the sauce with Italian seasoning, salt, and pepper.

Combining the Dish

  • Toss in the cooked pasta and chopped spinach, mixing well.
  • Heat through for a couple of minutes.
  • Serve immediately, garnished with fresh basil if desired.
