  • 8 ounces tomato sauce
  • 1/2 teaspoon dried basil For flavor
  • 1 teaspoon Italian seasoning For herby flavor
  • 1 to taste Salt and pepper Adjust to preference
  • 8 ounces cheese tortellini (refrigerated) Fresh for best texture
  • 1/2 cup parmesan cheese, grated For creaminess
  • 1 1/2 cups fresh spinach leaves Adds nutrition
  • 1/2 cup heavy cream or half and half For richness
  • 1/4 cup fresh basil, chopped For garnish and flavor

Instructions
 

Preparation

  • Heat a large pot over medium heat. Add the olive oil and butter, allowing them to melt and blend together.
  • Add the diced onion and cook for around 4 to 5 minutes until the onion becomes translucent and fragrant.
  • Add minced garlic and a pinch of red pepper flakes, cooking for an additional 1 to 2 minutes.
  • Sprinkle the flour while stirring constantly and cook for about 1 minute to create a roux.
  • Gradually pour in the vegetable broth, stirring continuously to avoid lumps.
  • Add the can of diced tomatoes and tomato sauce.
  • Season with dried basil, Italian seasoning, salt, and pepper. Simmer for 5 minutes.

Cooking

  • Add the cheese tortellini to the pot and cook according to package instructions, usually about 3 to 5 minutes.
  • Remove the pot from heat and stir in the fresh spinach until it wilts.
  • Blend in the grated parmesan cheese and heavy cream until well combined.
  • Finally, add the chopped fresh basil, stir, and serve.
