Equipment

  • Large Pot
  • Skillet
  • Wooden Spoon

Ingredients

Pasta

  • 8 ounces uncooked pasta such as fettuccine or penne

Sauce

  • 2 tablespoons butter
  • 2 garlic cloves minced
  • 2 tablespoons tomato paste
  • 14 ounce can tomato sauce
  • 3/4 cup heavy cream or whipping cream
  • 1/4 teaspoon Italian seasoning
  • salt and pepper to taste
  • freshly grated parmesan cheese for serving

Instructions

  • Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente, about 8–10 minutes. Drain and set aside.
  • While the pasta cooks, heat a skillet over medium-high heat. Melt butter and sauté minced garlic for 1 minute until fragrant.
  • Add tomato paste and tomato sauce to the skillet, stirring until well combined. Pour in heavy cream and add Italian seasoning. Stir and let simmer for 5 minutes.
  • Season the sauce with salt and pepper to taste. Add a pinch of sugar if the sauce is too acidic.
  • Add drained pasta to the skillet and toss to coat evenly in the sauce. If needed, add a splash of reserved pasta water to loosen the sauce.
  • Serve immediately with freshly grated parmesan cheese on top.

Notes

Feel free to customize with red pepper flakes, cooked chicken, or vegetables like spinach or mushrooms. For a lighter version, substitute half-and-half for heavy cream.
