Ingredients
  

For the soup

  • 1 pound ground beef You can substitute with turkey for a lighter option.
  • 1 medium onion, diced
  • 1 can (14.5 ounces) diced tomatoes No need to drain.
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup corn (frozen or canned) Fresh corn can be used as well.
  • 1 packet taco seasoning Choose your favorite brand.
  • 2 cups beef broth Use low-sodium if preferred.
  • 1 cup cream (heavy or sour) Both options work well.
  • Salt and pepper to taste

Cooking

  • Heat a large pot over medium heat and add ground beef and diced onion. Cook until beef is fully browned, about 5 to 7 minutes. Drain excess fat.
  • Stir in diced tomatoes, black beans, and corn, then sprinkle in taco seasoning and mix well to coat.
  • Pour in beef broth and bring to a simmer. Let it cook for about 10 minutes.
  • Lower heat and stir in cream. Cook until everything is heated through, about a few additional minutes.
  • Season the soup with salt and pepper to taste before serving.

Notes
