  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup uncooked white rice
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

  • to taste Black pepper
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Preparation

  • Heat the olive oil in a large skillet over medium heat.
  • Season the chicken breasts with salt and pepper. Place them in the skillet and cook for about 5-7 minutes on each side, or until browned and cooked through. Remove chicken from the skillet and set aside.
  • In the same skillet, add the diced onion and sauté until translucent, about 3-4 minutes.
  • Add the minced garlic and cook for an additional minute until fragrant.

Cooking

  • Pour in the chicken broth, scraping up any browned bits from the bottom of the pan.
  • Stir in the heavy cream, dried thyme, and oregano. Bring the mixture to a gentle simmer.
  • Add the rice to the skillet, stirring to combine. Place the chicken back into the skillet, ensuring it is submerged in the mixture.
  • Cover the skillet and reduce the heat to low. Let it simmer for about 20-25 minutes, or until the rice is tender and has absorbed most of the liquid.
  • Fluff the rice with a fork, and garnish with chopped parsley before serving.
