Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts Use good quality chicken for better flavor.
  • 2 tablespoons olive oil For cooking the chicken.
  • 1 medium onion, chopped Adds flavor to the dish.
  • 3 cloves garlic, minced Enhances the overall taste of the dish.

For the Sauce

  • 1 cup chicken broth Use low-sodium if preferred.
  • 1 cup heavy cream Can substitute with half-and-half for a lighter option.
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

For the Rice

  • 2 cups long-grain white rice Rinse under cold water before cooking.
  • 4 cups water For cooking the rice, adjust based on rice type.
  • 1 cup frozen mixed vegetables (e.g., peas, carrots, corn) Add vegetables during the last few minutes of cooking.

Garnish

  • Fresh parsley for garnish Adds color and flavor.

Instructions
 

Preparation

  • Heat the olive oil in a large skillet over medium heat.
  • Add the chopped onion and sauté until translucent.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Season the chicken breasts with salt, pepper, paprika, garlic powder, and onion powder.

Cooking

  • Place the seasoned chicken in the skillet and cook for 5-7 minutes on each side or until golden brown and cooked through.
  • Remove the chicken from the skillet and set it aside.
  • Pour in the chicken broth and bring it to a simmer, scraping up any browned bits from the bottom.
  • Stir in the heavy cream and return the chicken to the skillet. Let it simmer for about 10 minutes.

Rice Cooking

  • In a separate pot, rinse the rice under cold water.
  • Add 4 cups of water and a pinch of salt. Bring to a boil, cover, and reduce to low heat. Cook for 18-20 minutes.
  • In the last few minutes of cooking the chicken, stir the frozen mixed vegetables into the sauce. Cook until heated through.

Serving

  • Serve the creamy smothered chicken over the rice, garnished with fresh parsley.

Notes
