  • 2 cups tortellini (fresh or frozen) Cooking time varies, check package instructions.
  • 2 cups kale, chopped Can substitute with spinach or other greens.
  • 1 cup heavy cream For a lighter option, use half-and-half.
  • to taste Salt and pepper Adjust seasoning according to preference.
  • 1 tablespoon Olive oil For sautéing.

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and cook until softened and translucent, about 3 to 5 minutes.
  • Add Italian sausage, breaking it into smaller pieces with a wooden spoon, and sauté until browned, about 5 to 7 minutes.
  • Stir in minced garlic and cook for another minute until fragrant.
  • Pour in chicken broth and bring to a simmer, cooking for about 10 minutes.
  • Add tortellini and cook according to package instructions, usually around 3 to 5 minutes until tender.
  • Stir in chopped kale and heavy cream, heating through and seasoning with salt and pepper.

Notes
