  • 1 cup chicken broth For the sauce consistency
  • 1 cup heavy cream Can substitute with half-and-half or dairy-free alternatives
  • 4 cloves garlic (minced)
  • 1 teaspoon Italian seasoning or Herbs de Provence
  • 15 oz tomato sauce
  • 5 oz fresh spinach Can substitute with kale or arugula
  • to taste Salt and coarsely ground black pepper
  • to taste Red pepper flakes (optional) For added heat

Cooking

  • Heat olive oil in a large skillet over medium heat. Add crumbled Italian sausage and cook until browned and cooked through, about 5-7 minutes.
  • Add minced garlic and sauté until fragrant, about 1 minute. Pour in chicken broth and heavy cream, and add Italian seasoning. Stir and allow to simmer.
  • Bring to a gentle boil, then add uncooked rigatoni. Cover and simmer until pasta is al dente, about 10-12 minutes, stirring occasionally.
  • Add fresh spinach and stir until wilted and mixed into the sauce.
  • Adjust sauce thickness by adding more chicken broth or cream if too thick. If too thin, simmer uncovered for a few more minutes.
  • Season with salt, black pepper, and red pepper flakes as desired. Serve hot, garnished with extra spices or herbs.

Notes
