Preparation

  • Cook the sausage in a large pot over medium heat until browned, then remove and set aside.
  • In the same pot, sauté the chopped onion and minced garlic for about 3-5 minutes until translucent.
  • Add the diced potatoes and chicken broth, bring to a boil, then reduce heat and simmer for 15-20 minutes until the potatoes are tender.
  • Blend the soup with an immersion blender to your desired consistency.
  • Stir in the heavy cream and the cooked sausage, then season with salt and pepper to taste. Heat through.
  • Ladle into bowls and garnish with chopped green onions.
