- 1 pound ground beef Cook until fully browned.
- 1 cup bell peppers, chopped Use any color of bell pepper.
- 1 cup onions, chopped Chop finely for even distribution.
- 2 cups cheese, shredded (e.g., cheddar) Feel free to use different types of cheese.
- 1 can cream of mushroom soup This adds creaminess and flavor.
- 1/2 cup milk Can substitute with cream for a richer texture.
- to taste Salt and pepper Adjust according to preference.
Instructions
Preparation
- In a large bowl, mix together the cream of mushroom soup and milk until smooth and creamy.
Layering
- In your crockpot, layer half of the sliced potatoes at the bottom.
- Add half of the cooked ground beef on top of the potatoes.
- Sprinkle half of your chopped onions and bell peppers over the beef.
- Pour half of your creamy soup mixture over these layers.
- Add half of your shredded cheese.
- Repeat the layers with the remaining potatoes, ground beef, onions, and bell peppers.
- Cover with the remaining soup mixture and finish with the last bit of cheese.
Cooking
- Cover your crockpot and set it to cook on low for about 6-8 hours or on high for 3-4 hours until the potatoes are tender.
Serving
- Serve hot, garnished with extra cheese or fresh herbs if desired.
