  • 1 lb Italian sausage Choose mild or spicy based on preference.
  • 1 cup ditalini pasta Can substitute with similar pasta shapes.
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese

Vegetables

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 2 cups spinach, chopped

Seasoning

  • to taste Salt
  • to taste Pepper
  • Olive oil For sautéing.

Instructions
 

Preparation

  • Heat a generous splash of olive oil in a large pot over medium heat.

Sauté the Vegetables

  • Add diced onion, carrots, and celery. Sauté until tender and aromatic, about 5-7 minutes.

Cook Sausage

  • Add minced garlic and Italian sausage, breaking up the sausage as it cooks. Stir until browned and fully cooked, about 5-8 minutes.

Incorporate Broth

  • Pour in chicken broth and bring to a gentle simmer.

Cook Pasta

  • Stir in ditalini pasta and follow package instructions for cooking time.

Add Cream and Cheese

  • Reduce heat to low, stir in heavy cream and grated Parmesan cheese until well combined.

Add Spinach

  • Incorporate chopped spinach and cook until wilted. Season with salt and pepper to taste.

Serve

  • Ladle soup into bowls and serve warm.
