  • 4 pieces boneless, skinless chicken breasts
  • 8 oz fresh cremini or button mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 2 tsp fresh thyme leaves
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • Olive oil for cooking

Preparation

  • Gather all your ingredients to ensure a smooth cooking experience.
  • Chop the onion and garlic finely. Slice the mushrooms.

Cooking Chicken

  • Heat a skillet over medium-high heat and add olive oil. Season chicken breasts with salt and pepper.
  • Sear each side of the chicken for about 5-7 minutes until golden brown. Remove and set aside.

Making the Sauce

  • In the same skillet, add diced onions and minced garlic. Sauté for 3-4 minutes until translucent.
  • Add sliced mushrooms and cook for about 5 minutes until tender.
  • Pour in chicken broth and heavy cream. Stir and bring to a simmer, cooking for 5-10 minutes until thickened.
  • Add fresh thyme and parsley, then return seared chicken to the skillet, ensuring it's coated with sauce.
  • Let simmer on low for a few more minutes before serving.
