Ingredients
  

For the Soup Base

  • 1 pound ground beef Use high-quality beef for better taste.
  • 1 pound Italian sausage Use spicy sausage for more heat if desired.
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (6 ounces) tomato paste
  • 4 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon red pepper flakes Optional for heat.
  • Salt and pepper to taste
  • 8 pieces lasagna noodles, broken into pieces

For the Creamy Topping

  • 1 cup heavy cream
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions
 

Cooking the Base

  • In a large pot over medium heat, cook the ground beef and Italian sausage until browned, breaking it apart as it cooks. Drain excess fat if necessary.
  • Add the chopped onion to the pot and sauté for 3–4 minutes until softened. Stir in the minced garlic and cook for an additional minute.
  • Incorporate the diced tomatoes, tomato paste, chicken broth, Italian seasoning, and red pepper flakes (if using). Season with salt and pepper and bring the mixture to a boil.

Simmering the Soup

  • Add the broken lasagna noodles to the pot. Reduce the heat and let it simmer for about 15–20 minutes, or until the noodles are tender.
  • Stir in the heavy cream and ricotta cheese, mixing until well combined. Allow the soup to cook for an additional 5 minutes.
  • Sprinkle the mozzarella cheese and Parmesan cheese on top, letting it melt into the soup.

Serving

  • Serve hot, garnished with fresh basil.

Notes

For a lighter version, use ground turkey or chicken. To customize, incorporate different cheeses or add vegetables for variation. Storing: Allow to cool and refrigerate for up to three days or freeze for up to three months.
