  • 1 cup heavy cream
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 cups fresh spinach
  • 1 cup small pasta (optional)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add finely chopped onions and sauté until translucent and fragrant, about 4-5 minutes.
  • Crumble in the Italian sausage, cooking for 7-10 minutes until browned.
  • Stir in minced garlic and cook for about a minute.
  • Pour in the low-sodium chicken broth and stir to combine, bringing to a gentle simmer.
  • Lower the heat and gently stir in the heavy cream.
  • Fold in fresh spinach, allowing it to wilt for a couple of minutes.
  • Season with salt and pepper to taste, adjusting as necessary.
  • Serve hot, garnished with fresh herbs or cheese, if desired.

Notes
