  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper flakes Adjust to taste.
  • 1 can (14.5 ounces) crushed tomatoes
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese Plus extra for garnish.

  • Fresh basil leaves For garnish.

Instructions
 

Cooking the Pasta

  • Cook the rigatoni according to package instructions until al dente. Drain and set aside.

Making the Sauce

  • In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes.
  • Add the minced garlic, oregano, and crushed red pepper flakes. Sauté for an additional minute until fragrant.
  • Add the Italian sausage to the skillet, breaking it apart with a spoon. Cook until browned and fully cooked, about 6-8 minutes.
  • Stir in the crushed tomatoes, and bring the mixture to a simmer. Cook for 5 minutes, allowing the flavors to meld.
  • Reduce the heat to low, and stir in the heavy cream. Mix until well combined and heated through.

Combining and Serving

  • Add the cooked rigatoni to the sauce, mixing well to coat the pasta evenly.
  • Stir in the grated Parmesan cheese and season with salt and black pepper to taste.
  • Serve hot, garnished with fresh basil leaves and extra Parmesan cheese if desired.
