Ingredients
  

  • 1 tablespoon Olive Oil
  • 1 lb Ground Chicken
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Chicken Broth
  • 1 cup Heavy Cream
  • 1 cup Whole Milk
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Oregano
  • 0.5 teaspoon Salt adjust to taste
  • 0.25 teaspoon Black Pepper
  • 0.5 cup Parmesan Cheese grated
  • 0.5 cup Mozzarella Cheese shredded
  • 2 cups Fresh Spinach chopped
  • 1 medium Carrot diced
  • 1 stalk Celery diced
  • 0.5 teaspoon Red Pepper Flakes optional

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add ground chicken, breaking it up with a spatula, and cook for 5-7 minutes until browned.
  • Add chopped onion and sauté for 3-4 minutes until softened. Then add minced garlic and sauté for another 1-2 minutes.
  • Pour in chicken broth and stir well. Then add heavy cream and whole milk, mixing until combined.
  • Season with dried basil, oregano, salt, black pepper, and optional red pepper flakes. Let it simmer for 10-15 minutes.
  • Stir in grated Parmesan cheese until melted, then add shredded mozzarella until melted.
  • Add fresh spinach, diced carrot, and celery. Cook until vegetables are tender, about 5-7 minutes.
  • Taste and adjust seasoning if necessary, then serve warm.

Notes
