Instructions
Heat olive oil in a large pot over medium heat.
Add ground chicken, breaking it up with a spatula, and cook for 5-7 minutes until browned.
Add chopped onion and sauté for 3-4 minutes until softened. Then add minced garlic and sauté for another 1-2 minutes.
Pour in chicken broth and stir well. Then add heavy cream and whole milk, mixing until combined.
Season with dried basil, oregano, salt, black pepper, and optional red pepper flakes. Let it simmer for 10-15 minutes.
Stir in grated Parmesan cheese until melted, then add shredded mozzarella until melted.
Add fresh spinach, diced carrot, and celery. Cook until vegetables are tender, about 5-7 minutes.
Taste and adjust seasoning if necessary, then serve warm.
