Creamy Garlic Pasta

Ingredients
  

Pasta and Base Sauce

  • 500 g Shell Pasta or Pasta of Your Choice
  • 1 Tbsp Unsalted Butter
  • 1 tsp Olive Oil
  • 6 cloves Garlic, Minced
  • 400 ml Thickened Cream
  • 1/3 cup Chicken Stock or Vegetable Stock
  • 60 g Grana Padano or Parmesan Cheese, Freshly Grated
  • 120 g Baby Spinach
  • 5 g Flat Leaf Parsley, Roughly Chopped
  • Salt and Pepper to Taste

Preparation

  • Place a large pot of water over high heat and season it with salt. Bring to a rolling boil and cook pasta according to package instructions until al dente.
  • Heat the butter and olive oil in a large pan over medium-high heat. Add minced garlic before the pan gets too hot to prevent burning. Cook for about two minutes until fragrant.

Cooking

  • Add the chicken (or vegetable) stock to the garlic mixture and bring to a boil. Stir well to combine, then add the thickened cream, salt, and pepper. Bring back to a boil, then reduce heat and let it simmer for about 10 minutes until thickened.
  • Fold in the baby spinach until wilted, then turn off the heat and adjust seasoning if necessary.
  • Transfer the cooked pasta directly into the creamy garlic sauce, tossing to coat well. Use reserved pasta water if the sauce is too thick.
  • Stir in the grated cheese until melted and well combined.
  • Serve in bowls, garnished with chopped parsley.

Notes
