  • 8 oz whole wheat pasta Use your favorite shape of whole wheat pasta.
  • 2 cups cooked and shredded lean chicken breast Leftover chicken works well.
  • 1 cup Greek yogurt Use plain unsweetened Greek yogurt.
  • 1/2 cup grated Parmesan cheese Freshly grated is preferred for better melting.
  • 3 cloves garlic, minced Adjust according to taste.
  • 1 tablespoon olive oil
  • to taste Salt and pepper Start with a little and adjust as necessary.
  • for garnish Parsley Optional, for a pop of color.

Preparation

  • Begin by bringing a pot of salted water to a boil. Add the whole wheat pasta and cook according to the package instructions. Once al dente, drain the pasta and set it aside.
  • In a large skillet, heat olive oil over medium heat. Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
  • Stir in the shredded chicken to coat it with the garlicky oil and heat through for about 3-4 minutes.
  • Reduce the heat to low and add the Greek yogurt and Parmesan cheese. Stir continuously until the cheese has melted and the mixture is creamy.
  • Add the cooked pasta to the skillet and toss everything together until the pasta is evenly coated in the sauce.
  • Season with salt and pepper to taste, then serve warm, garnished with fresh parsley if desired.
