Instructions
Cook the pasta according to package instructions. Add a pinch of salt to the water. Drain and set aside.
In a large skillet, heat butter over medium heat. Add chopped onion and sauté until translucent (about 3-5 minutes).
Add minced garlic and cook for an additional minute.
Introduce ground chicken, breaking it apart with a spoon. Cook until browned and fully cooked (about 5-7 minutes).
Pour in the diced tomatoes, broth, Greek yogurt, and Parmesan cheese. Stir to combine.
Allow the mixture to simmer for about 5 minutes.
Mix in the cooked pasta until evenly coated. Garnish with fresh parsley before serving.
