Creamy Mixture

  • 1 cup cottage cheese Choose creamy, not watery cottage cheese.
  • 1 tablespoon olive oil For sautéing the garlic.
  • 2 cloves garlic, minced Adds flavor to the dish.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Adjust to taste.
  • 1/2 teaspoon dried basil Can substitute with fresh basil.
  • 1/4 teaspoon red pepper flakes Optional; adds heat.

Vegetables

  • 1 cup spinach or kale, chopped Can substitute with seasonal vegetables.
  • 1/2 cup cherry tomatoes, halved Adds freshness and color.

Garnish

  • to taste Fresh herbs (like parsley or basil) For garnishing before serving.

Instructions
 

Cooking Pasta

  • Boil a large pot of salted water. Add your pasta and cook according to the package instructions until al dente. Reserve about 1 cup of the pasta water before draining.

Preparing the Sauce

  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  • Stir in the cottage cheese, salt, black pepper, dried basil, and red pepper flakes (if using). Mix thoroughly.

Combining Ingredients

  • Add the drained pasta to the skillet, tossing well to coat it with the creamy cottage cheese mixture. If the pasta appears too dry, add reserved pasta water a little at a time until you achieve the desired creaminess.
  • Gently fold in the chopped spinach and cherry tomatoes. Cook for an additional 2-3 minutes until the greens wilt.
  • Taste and adjust seasonings as needed. Serve hot, garnished with fresh herbs.
