  • 1 tablespoon olive oil For sautéing
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups chicken broth
  • 2 cups shredded cooked chicken
  • 4 ounces cream cheese, softened and cubed

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and sauté for about 3-4 minutes until softened.
  • Stir in minced garlic and cook for another 30 seconds.
  • Add taco seasoning and mix well.

Cooking

  • Add black beans, corn, and diced tomatoes with green chilies. Stir until well combined.
  • Pour in chicken broth and bring to a gentle simmer.
  • After a few minutes, add shredded cooked chicken.
  • Incorporate softened cream cheese and stir until melted and fully combined.
  • Simmer for another 10-15 minutes to blend flavors.
  • Taste and adjust seasoning if needed before serving.

Notes
