Preparation

  • Heat oil in a large pot over medium heat. Add onions, carrots, and celery, sauté for 5 to 7 minutes until softened.
  • Add minced garlic and cook for an additional minute.
  • Introduce shredded chicken and chicken broth, stir in dried thyme, and bring to a gentle boil.
  • Carefully stir in potato gnocchi and cook according to package instructions (around 2 to 3 minutes).
  • Once cooked, reduce heat to low and stir in heavy cream. Season with salt and pepper.
  • Allow to simmer on low heat for a few more minutes before serving.

Serving
