Ingredients
  

Vegetables

  • 4 medium-sized potatoes, peeled and thinly sliced
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup bell peppers, diced
  • 1 cup fresh spinach

Cream Sauce

  • 2 cups shredded cheese (your choice of varieties)
  • 1 cup heavy cream
  • 1/2 cup milk
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil for sautéing
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional, for topping) for added crunch

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about a minute until fragrant.
  • Add the sliced carrots and broccoli florets to the skillet. Stir and cook until they start to soften, about 5 minutes. Remove from heat.

Layering and Baking

  • In a mixing bowl, combine the heavy cream, milk, dried thyme, salt, and pepper. Whisk until well mixed.
  • Grease a baking dish with a little olive oil. Layer half of the sliced potatoes at the bottom of the dish.
  • Spread half of the cooked vegetable mixture over the potatoes. Sprinkle half of the shredded cheese on top.
  • Pour half of the cream mixture over the layers you just created.
  • Repeat the layering process with the remaining potatoes, vegetables, cheese, and cream mixture.
  • If using, sprinkle breadcrumbs evenly over the top layer for added crunch.
  • Cover the dish with aluminum foil and place it in the preheated oven. Bake for 30 minutes.
  • After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes

For best results, slice potatoes evenly and consider using a variety of cheeses for added flavor. Allowing the dish to rest after baking makes serving easier. Fresh herbs like parsley or chives can enhance presentation and flavor.
