  • 1 lb chicken breast, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes (about 14.5 oz)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped green onions for garnish

Preparation

  • Heat 2 tablespoons of olive oil in a large pot over medium heat.
  • Add the chopped onion, minced garlic, and chopped bell pepper to the pot. Sauté for about 5-7 minutes until softened.
  • Add the diced chicken breast and sauté for another 5-8 minutes until browned and cooked through.
  • Stir in the Cajun seasoning and can of diced tomatoes along with the juice. Mix well.
  • Pour in the chicken broth and bring the mixture to a boil, scraping any bits from the bottom of the pot.
  • Once boiling, reduce heat and let simmer gently for about 20 minutes.
  • Stir in the heavy cream, adjusting seasoning with salt and pepper as needed.
  • Serve hot, garnished with chopped green onions.
