Creamy Cajun Chicken Pasta

Ingredients
  

  • 2 pieces Boneless, Skinless Chicken Breasts
  • 1 tablespoon Olive Oil
  • 1 tablespoon Cajun Seasoning
  • 12 oz Pasta Penne, fettuccine, or spaghetti
  • 2 tablespoons Unsalted Butter
  • 4 cloves Garlic Minced
  • 1 tablespoon Cajun Seasoning For sauce
  • 1 teaspoon Smoked Paprika
  • 1 cup Heavy Cream
  • 0.5 cup Chicken Broth
  • 0.25 cup Grated Parmesan Cheese
  • Fresh Parsley for garnish (optional)
  • Red Pepper Flakes to taste (optional)
  • Fresh Lemon Juice to taste (optional)
  • Sautéed Vegetables optional (optional)
  • Shrimp optional (optional)

Instructions
 

  • Season the chicken breasts with Cajun seasoning, salt, and black pepper. Heat the olive oil in a large skillet over medium heat.
  • Add the chicken to the skillet and sear for 6-7 minutes on each side until golden brown and cooked through. Remove and let rest before slicing.
  • In a pot of salted water, cook the pasta according to package instructions. Reserve about 1/2 cup of pasta water before draining.
  • In the same skillet, melt the butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  • Stir in the second tablespoon of Cajun seasoning and smoked paprika. Toast for about 30 seconds before adding the heavy cream and chicken broth.
  • Allow the mixture to simmer for about 5 minutes until slightly thickened. Return the sliced chicken to the skillet.
  • Add the cooked pasta and toss to coat. Use reserved pasta water to adjust the sauce consistency if needed.
  • Stir in the grated Parmesan cheese and mix until melted. Add lemon juice and garnish with parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove with a splash of broth or cream.
