Ingredients
  

Main Ingredients

  • 1 pound asparagus, trimmed and cut into pieces Choose fresh, thin asparagus for best flavor.
  • 1 tablespoon olive oil
  • 1 cup heavy cream Can substitute with half-and-half for a lighter version.
  • 1 onion chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth Homemade broth enhances flavor.
  • Salt and pepper to taste

Optional Toppings

  • croutons For added texture.
  • fresh herbs Such as parsley or chives for garnish.

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Chop the onion and mince the garlic.
  • Add the chopped onion and garlic to the pot and sauté until the onion is translucent and the garlic is fragrant, about 3 to 4 minutes.
  • Add the chopped asparagus to the pot and stir for about 1 minute.
  • Pour in the vegetable or chicken broth and bring it to a boil.
  • Reduce to a simmer and cook for about 15 minutes, or until the asparagus is tender.

Blending and Finishing

  • Blend the soup until smooth, using an immersion blender or transferring to a regular blender in batches.
  • Return the blended soup to the pot if using a regular blender. Stir in the heavy cream and season with salt and pepper.
  • Simmer gently for another 5 minutes without boiling.

Serving

  • Ladle the soup into warm bowls and garnish with croutons and fresh herbs, if desired.

Notes
