Ingredients
  

Banana Bread Batter

  • 2 large very ripe bananas, peeled and mashed The riper the bananas, the sweeter the bread.
  • 1/3 cup salted butter, melted Ensure it's melted before use.
  • 3/4 cup light brown sugar, packed Adds sweetness and moisture.
  • 1 large egg Essential for binding the ingredients.
  • 2 teaspoons vanilla extract Enhances the overall flavor.
  • 1 teaspoon baking soda Important for leavening the bread.
  • 1 1/2 cups all-purpose flour Make sure to measure accurately.

Cream Cheese Mixture

  • 6 ounces cream cheese, room temperature Makes it easier to blend.
  • 1/4 cup granulated sugar Balances the creamy flavor.
  • 1 large egg Another egg for the cream mixture.
  • 1/2 teaspoon vanilla extract For added depth of flavor.
  • 3 tablespoons all-purpose flour Helps to thicken the mixture.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and spray a 9x5-inch loaf pan with nonstick cooking spray.
  • In a large mixing bowl, combine the mashed bananas, melted butter, light brown sugar, egg, vanilla extract, and baking soda. Stir until nicely combined.
  • Gently include the flour, mixing until just incorporated without overmixing.

Cream Cheese Mixture

  • In a separate bowl, beat the cream cheese and granulated sugar until smooth using a stand mixer or electric mixer.
  • Add in another egg and a hint of vanilla extract to the mixture before folding in the flour.

Assembly and Baking

  • Spread half of the banana bread batter into the prepared loaf pan.
  • Layer the cream cheese mixture evenly over this batter.
  • Spread the remaining banana bread batter over the cream cheese layer, trapping the mixture inside.
  • Bake in the preheated oven for about 50 to 60 minutes. Check doneness with a toothpick.

Cooling and Serving

  • Let the bread cool in the pan for 20 to 30 minutes before transferring to a wire rack to cool completely.
  • Serve warm or at room temperature. Enjoy with a dollop of butter, sprinkle of cinnamon, or on its own with coffee or tea.

Notes

To store, keep in an airtight container at room temperature for 2-3 days, or refrigerate for up to a week. For longer storage, slice and freeze the bread.
