Ingredients
  

For the broth and chicken

  • 2 cups cooked chicken, shredded Rotisserie chicken can be used for convenience.
  • 4 cups chicken broth Homemade broth is preferable for better flavor.

For the dumplings

  • 1 cup milk Can be substituted with low-fat or non-dairy milk.
  • 2 cups all-purpose flour Use gluten-free flour for a gluten-free option.
  • 1 tablespoon baking powder
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon pepper Adjust to taste.
  • 3 tablespoons butter Melted.

For sautéing

  • 1/2 cup chopped onions
  • 1/2 cup chopped celery

Instructions
 

Preparation

  • Melt the butter in a large pot over medium heat.
  • Add chopped onions and celery and sauté for about 5 minutes until soft and fragrant.
  • Pour in the chicken broth and bring the mixture to a boil.

Dumpling Preparation

  • In a mixing bowl, combine all-purpose flour, baking powder, salt, and pepper.
  • Slowly add milk to the flour mixture, stirring until a thick dough forms.

Cooking

  • Once the broth is boiling, reduce heat slightly and drop spoonfuls of dumpling dough into the pot.
  • Cover the pot and let the dumplings simmer for about 15 minutes.
  • After the dumplings have cooked, stir in the shredded chicken and allow to cook for an additional 5 minutes.

Serving

  • Ladle the chicken and dumplings into bowls and serve hot.
