  • 1 cup corn (fresh or canned) Add sweetness to the soup.
  • 2 cups potatoes, diced Provides heartiness to the soup.
  • 1 large onion, chopped Base flavor for the soup.
  • 2 cloves garlic, minced Enhances the aromatic profile.
  • 2 tablespoons butter For sautéing the vegetables.
  • to taste Salt and pepper Adjust seasoning to your preference.
  • Fresh parsley for garnish Adds color and fresh flavor to the soup.

Preparation

  • Melt the butter in a large pot over medium heat.
  • Add the chopped onion and minced garlic, and sauté until translucent and fragrant, about 3-4 minutes.

Cooking

  • Add the diced potatoes and corn to the pot, stirring to coat with butter and aromatics.
  • Pour in the chicken or vegetable broth, covering the vegetables completely.
  • Increase the heat to bring to a boil, then reduce to a simmer and cover the pot. Cook until potatoes are tender, about 15 minutes.
  • Stir in the heavy cream and fresh crab meat, then season with salt and pepper.
  • Simmer for an additional 5-10 minutes without overcooking the crab.
  • Serve hot, garnished with freshly chopped parsley.
