  • 3/4 pound extra lean ground beef Choose lean to keep the dish lighter.
  • 2 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 1 15-ounce can chopped stewed tomatoes
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/8 teaspoon cayenne pepper Adjust to taste.
  • 1 15-ounce can pinto beans, rinsed and drained
  • 1/2 teaspoon salt

  • Heat a large saucepan over medium heat.
  • Add the ground beef, minced garlic, and chopped onion. Stir frequently for about 10 minutes until the beef is browned and onions have softened.
  • Spoon out any excess fat to keep the chili lean.
  • Stir in the chopped stewed tomatoes and beef broth.
  • Add chili powder, cumin, oregano, and cayenne pepper. Mix well.
  • Reduce the heat to low and cover the saucepan. Let it simmer for about 1 hour, stirring occasionally.
  • After 1 hour, add the pinto beans and salt. Stir to combine.
  • Let the chili cook for an additional 15 minutes until heated through.
  • Serve in bowls and enjoy the aroma before diving in.

Notes
