Ingredients
  

For the Cowboy Butter Sauce

  • 1/2 cup salted butter, softened Ensure butter is at room temperature
  • 2 tablespoons brown or grainy mustard
  • 2 tablespoons chopped parsley For mixing into the sauce
  • 4 teaspoons fresh thyme
  • 2 teaspoons lemon juice Divided for sauce and garnishing
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt For seasoning
  • 1/4 teaspoon black pepper
  • pinch cayenne pepper Or to taste for heat
  • pinch red chili flakes Or to taste

For the Spaghetti Dish

  • 1 pound spaghetti Cooked according to package instructions
  • 1 1/2 cups heavy cream For the sauce
  • 1 teaspoon lemon juice For the sauce
  • 1/8 teaspoon garlic salt
  • pinch red pepper flakes Optional for additional heat
  • Chopped parsley for garnish Add for serving

Instructions
 

Preparation

  • Gather all your ingredients to ensure a smooth cooking experience.
  • In a mixing bowl, blend the softened butter with the mustard, parsley, thyme, lemon juice, smoked paprika, kosher salt, black pepper, cayenne, and red chili flakes until well combined.
  • Push the butter blend to the center of the bowl, cover with plastic wrap and refrigerate for 2 hours (or overnight) if possible.
  • If short on time, you can use it immediately.

Cooking the Pasta

  • Bring a large pot of lightly salted water to a rolling boil. Add spaghetti and cook according to package instructions, about 12 minutes.
  • Reserve 1/4 cup of the pasta water before draining the spaghetti.

Making the Sauce

  • Melt the remaining butter in a large saucepan over medium-low heat.
  • Pour in the heavy cream, the second teaspoon of lemon juice, garlic salt, and red pepper flakes. Stir gently and heat until steaming, about 5 minutes.
  • Add the drained spaghetti to the rich sauce, tossing to coat thoroughly.
  • Use the reserved pasta water gradually to adjust the sauce consistency as desired. Taste and adjust seasonings with salt if necessary.

Serving

  • Divide the spaghetti among bowls, garnishing with additional chopped parsley.
