Ingredients
  

Cupcakes

  • 1 1/2 cups cake flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup milk
  • 1 teaspoon cotton candy flavoring adjust to taste
  • pink and blue food coloring optional for color swirl

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  • In a bowl, whisk together cake flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream butter and sugar together until light and fluffy.
  • Beat in eggs, vanilla extract, and cotton candy flavoring until combined.
  • Add the dry ingredients in three parts, alternating with the milk, starting and ending with the dry ingredients.
  • Divide the batter between two bowls, tint one pink and one blue, then swirl together gently in the cupcake liners.
  • Bake for 16-18 minutes or until a toothpick inserted comes out clean. Let cool completely before decorating with cotton candy.

Notes

Decorate with cotton candy just before serving to prevent it from melting. Adjust the cotton candy flavoring to your taste for a stronger or lighter flavor.
