Main Ingredients

  • 1 piece Raw Sweet Potato (about 6 or 7 ounces)
  • 1/4 teaspoon Olive Oil or Avocado Oil
  • to taste Ground Cinnamon Sprinkle generously over sweet potatoes
  • 1/2 cup 2% Cottage Cheese Use high-quality cottage cheese for best flavor
  • 2 tablespoons Granola For added crunch
  • 1 teaspoon Honey You can substitute with maple syrup if preferred
  • to taste Fresh Berries Optional for topping

Instructions
 

Preparation

  • Preheat the oven to 400°F.
  • Slice the sweet potato in half lengthwise and rub olive oil or avocado oil over the skin and flesh.
  • Place the sweet potatoes cut side down on a baking sheet and bake for about 30 minutes, or until fork-tender.

Assembly

  • Once baked, remove from the oven and let cool for a few minutes.
  • Flip the sweet potatoes over, sprinkle ground cinnamon over the flesh, and mash lightly with a fork.
  • Scoop half a cup of cottage cheese onto each sweet potato half.
  • Sprinkle granola on top of the cottage cheese and drizzle honey over the dish.
  • Add fresh berries on top or alongside if using.

Notes

Store leftovers in airtight containers. Separate the cottage cheese and granola to keep fresh. Reheat in a toaster oven or microwave before serving.
