  • Begin by placing the cottage cheese in a blender or food processor. Blend until smooth, achieving a creamy consistency.
  • In a mixing bowl, combine the blended cottage cheese, shredded cheddar cheese, diced tomatoes with green chilies, and chopped green onions.
  • Add the garlic powder, ground cumin, smoked paprika, salt, and pepper. Mix everything together until well combined.

Cooking

  • Transfer the mixture to a serving bowl or a small casserole dish. If you prefer a hot dip, preheat your oven to 350°F (175°C) and bake for about 15-20 minutes until the cheese is melted and bubbly.
  • Remove from the oven, let it cool slightly, and serve warm, garnished with fresh cilantro if desired.
