  • 1 cup cottage cheese
  • 1 cup pure pumpkin puree
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs

Dry ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it lightly or lining it with parchment paper.
  • In a large mixing bowl, combine the cottage cheese, pumpkin puree, vegetable oil, and granulated sugar. Mix until smooth and creamy.
  • Beat in the eggs one at a time, ensuring they are fully incorporated before adding the next one.

Mixing dry ingredients

  • In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. If you’re adding nuts or chocolate chips, fold them in now.

Baking

  • Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  • Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, remove the loaf from the oven and allow it to cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely before slicing.

Notes

For a classic approach, slice the bread and enjoy it plain or toasted. You can add cream cheese or honey for extra flavor. Store the bread wrapped tightly in plastic wrap for up to 3 days or freeze for up to 3 months.
