  • 1/2 cup cottage cheese Choose your preferred kind
  • 1/4 cup shredded cheese Any variety you like
  • 1 tablespoon milk Optional for added creaminess
  • 1 tablespoon butter or cooking oil For cooking
  • to taste Salt and pepper To season

Instructions
 

Preparation

  • Crack the eggs into a mixing bowl. Add milk, salt, and pepper. Whisk until well combined and slightly frothy.
  • Gently fold in the cottage cheese and shredded cheese. Incorporate any chopped vegetables or herbs if desired.

Cooking

  • Heat a non-stick skillet over medium heat. Add butter or cooking oil and allow to melt.
  • Pour the egg mixture into the skillet, tilting to spread evenly. Cook for 3-4 minutes until edges set and bottom is golden.
  • Carefully lift the omelette edges with a spatula, allowing uncooked egg to flow underneath.
  • Once the center is slightly runny, fold the omelette in half. Cook for an additional minute.
  • Slide the omelette onto a plate and garnish with extra herbs or cheese if desired before serving.
