Mousse Ingredients

  • 2 cups cottage cheese Full-fat for richer texture
  • 1/2 cup heavy cream Whipped until soft peaks form
  • 1/2 cup fresh lemon juice Preferably freshly squeezed for best flavor
  • 1 tablespoon lemon zest Zest only the yellow part
  • 1/2 cup honey or maple syrup Adjust sweetness to taste
  • 1 teaspoon vanilla extract
  • 2 teaspoons gelatin (optional) For added firmness
  • 1 pinch salt Enhances flavors

Instructions
 

Preparation

  • Blend the cottage cheese in a blender or food processor until smooth and creamy.
  • In a separate bowl, whip the heavy cream until soft peaks form.
  • Combine lemon juice, lemon zest, honey or maple syrup, and vanilla extract in another bowl and mix well.
  • If using gelatin, sprinkle it over cold water in a small dish and let it bloom for 5 minutes. Heat gently until dissolved, then stir into the lemon mixture.
  • Combine the blended cottage cheese with the lemon mixture, blend until mixed, then gently fold in the whipped cream.
  • Taste and adjust sweetness with more honey, if desired, then add a pinch of salt.

Chilling

  • Transfer the mousse into serving dishes or a large bowl, cover with plastic wrap, and chill for at least 2 hours until set.

Notes
